This is the original recipe for the famous pasta arrabiata sauce that we all love, as prepared in Lazio, Italy, where it originated.
To make the arrabiata sauce, you need these ingredients:
- Butter or olive oil
- Red chili pepper, finely chopped
- Two cloves of garlic, finely chopped
- Tomato sauce
- Basil leaves
- 2 tablespoons of finely chopped parsley
- Salt and pepper to taste
Preparation:
Fill a large pot with water, add some salt and bring to a boil.

In a large pan, add the olive oil or butter and leave on medium heat until is ready. Add the garlic and red pepper and let them fry for 5 minutes.
Then, add the tomato sauce, mix well, reduce the heat to medium-low and let it cook for 20 minutes or until the sauce thickens.
When the sauce has 10 minutes left to be ready, cook the pasta in boiling water according to the instructions on the package and drain well when is ready.

Add parsley, basil, salt and pepper to the sauce. Then add the cooked and drained pasta to the sauce and mix together for 1 minute.

When you serve them, for a better taste, you can throw parmesan cheese on top. Enjoy your meal!
